This Shiraz has rich essence of ripe blackberries and plums. The stylish palate has the feature flavours of cold climate Shiraz including spice, peppers, blackberry and blackcurrant.This greatly awarded limited release ?Bird in Hand? Shiraz is sourced from premium vineyards and is from one of most vintages. The hand chosen grapes were trampled in small open fermenters.
Every fermenter was pumped over twice daily, for a minimum of seven days to maximise the flavour and tannin withdrawal. After that the wine was pressed off its skins and developed in a mix of new and old French oak barriques for upto 16 months.
